Yes I am late… for a very important date!!! Fun with Food Friday…ahhh!!!! My co-hosts this week are Adventures in all things food, Coping with Frugality, and Mama Chocolate!

This week I am trying out Mexican Casserole a recipe from Erin Rigwald!

Mexican Casserole

1 lb ground chuck, cooked & crumbled
16 oz jar salsa
1 can chili beans, drained
16 oz sour cream
1 large tomato, diced
4 oz can sliced black olives, drained
1 c shredded cheddar

Brown the beef in a skillet. Drain the fat. Mix in the salsa and chili beans.

(I didn’t have chili beans, so I used black beans…. they were really good!!!)

Heat for two to three minutes to combine. Pour the meat mixture into a pyrex baking dish. The original recipe says to put crushed up tortilla chips in the bottom, I think it makes the chips too soggy.

**I did layer the chips in the bottom and didn’t have problems with the chips getting soggy…. I really liked it with the chips!!

Spread the sour cream over the meat (I usually stir it in, but you can just put a layer if you prefer). Sprinkle the olives and tomatoes on top (or replace the olives with corn). Sprinkle the top of the casserole with cheddar….

Bake 350 – 30 mins or until cheese is melted and heated through.
Serve with chips, wrap in tortillas or make a salad out of it. YUM!

Erin says this is one of those dishes that are delicious but 1000 times better the next day…

I have to admit that my oldest daughter actually cooked dinner for me (I have been running crazy… yes, it is my normal, but I just ran out of time). Thank goodness God blessed me with a helpful 11 year old that likes to cook….and is GOOD at it! :)

She did a great job! We all loved this recipe ALOT! The kids raved about it and hubby was totally impressed that his little girl rocked dinner!

I would definitely recommend this recipe… it is getting added into our rotation! And, it is very easy and quick!
